I have a mild gluten allergy and I really need to take better care of myself. I made this recipe up to add some creativity to my new eating habits. You'll want to pick your favorite dough and curry sauce and make adjustments where necessary. I used Bob's Red Mill and made it a 12" pizza and Trader Joe's Yellow Curry Sauce (this sauce is made with products exposed to wheat, nuts, and soy).
12" GF Pizza dough
1/2 cup yellow curry sauce, separated
1 cup shredded chicken
1/4 cup chopped cilantro, separated
1/4 cup sliced red bell peppers
1 cup mozzarella cheese
Preheat oven to 425 degrees. Flatten dough to be 12" round. Spread half of the sauce over the dough until covered. Sprinkle half of the cilantro over the sauce. Add the following ingredients in order: shredded chicken, last half of cilantro, red bell peppers, cheese. Lastly, drizzle the last half of the sauce over the entire pizza. Bake for 12 min. or until heated through. Let stand for 2 min. once out of the oven. Slice and enjoy!
